WHAT I ATE WEDNESDAY | 10/8/26

Today marked the day that I finally bought myself a new phone after needing a new one for about a year. It also marked the day that I was finally able to play Pokemon Go without it crashing. Better late than never! In order to fuel my new found Pokemon hunting it was important to keep my energy levels up so as always, a day filled with delicious food was necessary.

BREAKFAST

WEETABIX WITH BANANA, AGAVE NECTAR & CINNAMON

The classic combo of Weetabix and banana never gets old. I usually have honey with it but I recently bought agave nectar since it was cheaper than the honey I usually buy so I’ve been using that instead. I still prefer honey but it’s definitely a good enough substitute if you’re following a vegan lifestyle. I also added some cinnamon for some extra spice! A wonderfully sweet brekkie complete with the usual morning coffee.

LUNCH

TOASTED SWEET CHILLI TURKEY, CUCUMBER & HOUMOUS SANDWICH

BAOBAB & ONION KALE CHIPS

I genuinely could not remember the last time I was THIS hungry for lunch! After going out to buy a new phone and a few other bits & bobs, it was almost 1 when we got home. Now, I know that’s not that late but I get hungry very easily and with almost a five hour gap between breakfast & lunch it’s understandable. Today I went for a toasted sandwich with sweet chilli turkey, caramelised onion houmous & cucumber followed by a packet of these baobab & onion kale chips by Inspiral. I was very intrigued as to what these would taste like since they’re coated in a cashew nut sauce and oh my god, THEY WERE SO GOOD! I highly recommend them if you’re looking for a healthier alternative to your usual crisps.

SNACK

GINGER BREAD NAKD. BAR

After playing around with my new phone and going on a short walk with my family, it was time for an afternoon coffee. Alongside my caffeine top up I had a ginger bread nakd. bar. This is one of my favourite flavours.

DINNER

RED & BLACK BEAN CHILLI

As my family were having chilli for dinner, I decided to have some of the red & black bean chilli that I had left over in the freezer. I made this a couple of weeks ago from the recipe in Deliciously Ella’s first book. It’s definitely one of my favourite things I’ve made from the book so far. It’s a great veggie/vegan alternative. Served with the Tilda garden vegetable & quinoa rice, it makes a deliciously warming & healthy meal.

DESSERT

COCONUT YOGURT WITH BLUEBERRIES & GRANOLA

And now for my favourite time of day – DESSERT! Today I decided on coconut yogurt topped with blueberries & granola. This is the blueberry & almond granola by Viki’s Granola. It’s so much better for you than a lot of shop bought granolas as it’s sweetened with honey and contains all natural ingredients.
