Today I have another What I Ate Wednesday post for you all. Now that my classes have finished and my essays handed in I am officially on my Christmas holidays! After this first semester at uni I’m so relieved to have a month off and am in much need of multiple days at home doing absolutely nothing. This was one of those days.
CHIA PORRIDGE WITH BANANA, AGAVE NECTAR & CINNAMON
I’ve been putting the chia seeds I bought at Vegfest to good use and have been making chia porridge most mornings. So much nutrition in this little extra ingredient. I topped it with banana, agave nectar & cinnamon. I usually have this combo on Weetabix but it tastes just as good with porridge. I also had my Cadbury’s advent calendar chocolate of course. I’m definitely going to be one of those people who still have an advent calendar in their 40s.
HOUMOUS & VEGGIES
Nothing new here. The classic Elijah lunch made with vegetable rice/quinoa, tikka turkey chunks, sugarsnap peas & baby corn with a side of my favourite sweet chilli houmous, carrots & cucumber.
MINT GOOD. BAR
My second favourite time of day – snack time (my first favourite is obviously breakfast). My snack stash is well and truly stocked up once more meaning it usually takes me about five minutes to actually choose something! Today I opted for the coco & mint raw bar by Good. It’s similar to the cocoa mint nakd. bar but is a bit softer. I also tried this Christmas pudding coffee that I received in the Black Friday MyVitamins snack box that I won. It’s decent enough and is the perfect way to sweeten a coffee instead of using sugar or a syrup but I much prefer normal coffee.
SQUASH & MASSAMAN CURRY BAKE WITH RICE
I always love to try new veggie options and this bake from Morrisons is pretty good! I teamed it with the rest of the rice/quinoa that I had at lunch and a mix of peas, sweetcorn & carrots.
The day is not complete without dessert. I opted for something a bit lighter and had some of this vanilla yogurt. I also sometimes like to add granola to it. I’m really wanting to start buying dairy free yogurts so if you have any brand suggestions then let me know!
