Welcome back to another What I Ate Wednesday! Once again, I feel as though it’s been a while since I’ve done one of these so I thought it was about time to get my butt in gear and share with you all the sweet, sweet food I’ve been eating.
PEANUT & APPLE GRANOLA
If you follow me on Instagram you may have seen that I was lucky enough to win a number of competitions over December. This granola was one of my prizes! It’s by the brand Spoons who I had never heard of before. This peanut & apple granola is made with all good ingredients and is sweetened with maple syrup unlike your usual shop bought granolas that are packed with added sugars. It’s 100% one of the best granolas I have ever tried.
CARROTS WITH HOUMOUS
This is actually a picture from a while back but my lunch was pretty much the same as this. Today’s rice salad was made with Tilda roasted vegetable rice, green pepper & cucumber with a side of tomatoes, carrot sticks & mexican jalapeno houmous. The houmous was spicier than I had thought and I was sitting in the uni canteen with my mouth burning!
RICE CAKES WITH MAPLE PEANUT BUTTER
Once I returned home I had a bit of work to do and needed a refuel. Along with my coffee I had two blueberry & vanilla rice cakes topped with maple peanut butter. This nut butter is by Pip & Nut and is divine! It’s limited edition – although it has been out for a while now – so if you’re a nut butter enthusiast like myself then make sure you grab a jar before it disappears.
Tonight’s dinner was a delicious warming chicken curry. I’m not sure what sauce this was (it’s probably between rogan josh, jalfrezi or balti) but it was the perfect meal for a cold January evening.
SWEET CHILLI & LEMON SNAPEA RICE STICKS
As usual I had to have something to munch on at the end of the day. I received this banana chocolate milk in this months Vegan Kind box. I’m already a huge fan of Rebel Kitchen but banana flavoured things aren’t my favourite so I thought it a long shot that I would actually like it. However, it wasn’t as bad as I thought it would be, probably because it actually has crushed banana in it and not artificial banana flavouring.
As I’m writing this I am also munching on the last of my sweet chilli & lemon snapea rice sticks that I also recieved in this months Vegan Kind box. These make a great healthier alternative to crisps.
